
Buffalo-flavored comfort food keeps trending every single year, and this sandwich takes the viral “chickpea salad melt” idea and makes it fully plant-based, hearty, and perfect for a fast lunch.

Ingredients
- 1 can (15 oz) chickpeas, drained and mashed
- 3 tbsp vegan mayo
- 2 tbsp buffalo hot sauce
- 1 celery stalk, finely diced
- ΒΌ tsp garlic powder
- 4 slices sourdough or whole-grain bread
- 4 slices dairy-free cheddar-style cheese
- 2 tbsp vegan butter, softened
- Optional: shredded lettuce, sliced tomato
Method
- In a bowl, mash the chickpeas with a fork, leaving some texture.
- Stir in vegan mayo, buffalo sauce, celery, and garlic powder until well combined.
- Spread the chickpea mixture generously onto two slices of bread. Top with dairy-free cheese and the remaining bread slices.
- Butter the outside of each sandwich.
- Grill in a skillet over medium heat for 3β4 minutes per side, pressing gently, until golden brown and the cheese has melted.
- Slice and serve hot, with lettuce and tomato if desired.
